Fish are treated by applying to them, for the duration of 30 seconds to 5 minutes, a composition kept at a temperature of between 70 and 100 DEG C, which lifts the skin from the flesh, the said composition being an aqueous solution containing urea and optionally an alkaline agent, the pH of which in an aqueous solution of 1% by weight is at least 8.5 at 20 DEG C; the skin is separated from the flesh and the skinned fish are recovered. The composition can contain 0.1 to 5% by weight of urea and 0 to 5% by weight of the said alkaline agent and can have a pH between 8.3 and 13. The method is applicable to all fish and in particular to the following: tuna, herring, mackerel, hake, cod, pollack. |
