PURPOSE:To obtain a nourishing supplementary drink rich in useful amino acids, by dipping nonboiled grains in an aqueous solution of acetic acid cotaining KOJI added thereto, distilling away the acetic acid and water from the dipping solution containing the resultant protein hydrolyzate, and concentration the resultant solution. CONSTITUTION:A nourishing supplementary drink obtained by adding KOJI or an enzyme thereof to a weakly acidic aqueous solution of acetic acid (brewed vinegar) (about 2.6pH and about 2.5% acidity), dipping nonboiled grains, e.g. crushed unpolished rice, at about 40 deg.C for about 90 days, removing the grains, distilling the resultant dipping solution under reduced pressure, evaporating the acetic acid and water thereform to concentrate the solution to an amount of 1/10 the initial amount, and containing much amino acids required by the human body. |
