PURPOSE:To prepare a solid food having excellent taste, flavor and palatability, etc., by adding a phosphoric acid salt or sodium citrate to vegetable and/or fruit subjected to the lactic acid fermentation, and adding a specific protein component and edible oil or fat to the mixture. CONSTITUTION:(A) A phosphoric acid salt or sodium citrate is dissolved in (B) processed vegetable and/or fruit subjected to lactic acid fermentation; and further, (C) a protein component selected from rennet casein, acid casein, sodium caseinate, soybean protein, wheat protein and defatted milk powder is dissolved in the above solution under heating. The obtained mixture is further added with (D) an edible oil or fat, and stirred under heating. If necessary, the pH of the mixture is adjusted with an organic acid, and the salt concentration and the viscosity are adjusted to proper levels. Furthermore, the weight ratios of C:D:B are adjusted to 1:(0.8-1.4):(1.9-3.3), and the amount of the component A is made to be 0.3-4wt% of the sum of the components B, C and D to obtain the objective solid food. |
