<p>PURPOSE:To prepare an agar liquor having the excellent taste and flavor of agar, under mild conditions, by decomposing agar with cellulase, adding sugars and minor nutrients to the decomposition product, and fermenting the mixture using a yeast. CONSTITUTION:Agar [e.g. laver, MOZUKU (Nemacystus decipiens), etc.] is added with cellulose-decomposition enzyme (e.g. cellulase, pectinase, etc.) and if necessary protease and/or amylase, and left for 6-48hr usually at 40-50 deg.C. The obtained decomposition product is incorporated with sugars (e.g. glucose, fructose, etc.) and minor nutrients (fermentation-promoting substances such as metals, vitamins, etc.), and is fermented by the use of a yeast.</p> |
