The invention relates to a preparation method for preserving seeds of leguminous plants belonging to the papilionaceae family for food purposes. This method is noteworthy in that it consists, successively: - in simultaneously introducing a specific volume of seeds and a proportional volume of water into a flexible packaging made from a gastight and liquid-tight material; - in placing the said package under vacuum and closing it hermetically; - and in cooking the seeds while this package undergoes sterilisation. Applications: preparation for preservation at ambient temperature and immediate consumption of lentils, peas, beans, broad beans, etc. |
