The present invention relates to a process for the manufacture of a nutritious drink based on whey. The implementation of the operations is the following: - ultrafiltration of whey by passing at least once through an ultrafiltration cell equipped with a semipermeable membrane which has a specific molecular weight cut-off of between 20,000 and 70,000 Daltons; - acidic fermentation of the ultrafiltration retentate, in the presence of lactic acid bacteria; - introduction into the fermented liquid medium of a stabilising agent and/or additives which modify the rheological and organoleptic properties of the said fermented liquid medium; - heat treatment intended to lengthen the lifetime and to ensure a partial denaturation of the soluble proteins and, - homogenisation of the drink thus obtained, it being possible for this operation to be carried out before or after the heat treatment.
