A method for extracting and returning a sample, which is to be subjected to humidity measurement, from a continuously moving conveyed stream is described, it being the case that in order to facilitate the execution of this method even in the case of conveying sections that are difficult to access and vary strongly in terms of quantity, and to ensure perfectly measured physical values, a proportion of the conveyed stream undergoing movement is branched off and transferred to an intermediate store, measured in a contactless fashion there in a state of rest and after measurement is finished the material is returned to the conveyed stream in a continuous manner.
