PURPOSE:To produce a fish meat product having a high jelly strength and good gel structure, by adding a chelating agent and a proteolytic enzyme inhibitor to a fish raw material to give the aimed fish meat product. CONSTITUTION:A chelating agent, preferably ethylenediaminetetraacetic acid (EDTA) or proteolytic enzyme inhibitor, preferably trypsin inhibitor or both are added to a fish raw material (usable regardless of the kind and utilization site) to give the aimed fish meat product. EFFECT:Fish resources are effectively utilized. |
