<p>PURPOSE:To improve the thermal efficiency and to prevent food refuse from adhering to food to be cooked, by arranging a burner in a lower part of a cylindrical member, and connecting the combusted gas path to the space outside a tank at a point between the upper end of the cylindrical member and the lower end of the tank. CONSTITUTION:A cylindrical member 3 for guiding combustion gas is arranged in the space (A) below an oil tank 1 of which the upper part is open and of which the central part of the bottom wall 2 is raised in such a way that the upper end opening of the cylindrical member 3 is situated adjacent to the undersurface of a bottom wall section 2A. The combustion gas from a burner 4 is allowed to be discharged from the upper end opening of the cylindrical member 3 to heat the bottom wall section 2A, and is then allowed to flow through the space between a bottom wall section 2B and the cylindrical member 3 into a combustion gas path 7 to heat the bottom wall section 2B thereby efficiently heating the oil contained in the tank. Food refuse resulted from frying is permitted to settle in the oil in a cold zone (B) formed in the lower part of the oil tank 1, so that the food refuse can be prevented from adhering to the fried food located in the upper part of the oil tank 1.</p> |
