PURPOSE:Dried gelatinized rice not evolving an oxidation smell, having no change in taste even by preserving it for a long period, containing vitamin E and skim powdered milk. CONSTITUTION:Polished rice is washed well, dehydrated, 5 times as much water as the rice by weight is added to it, and they are allowed to stand for 30min- 1hr. Then, preferably 0.01-0.2wt% vitamin E (e.g., alpha-, beta-, gamma-, delta-tocopherol, etc.) and preferably >=0.2wt% skim powdered milk are added to them, and the rice is boiled to give rice gruel. It is dried by a drum dryer, etc. at 140 deg.C, and ground, to give the aimed dried gelatinized (alpha) rice. |
