PURPOSE:To obtain dried rice having improved loosening properties and improved restoring properties, by washing raw material rice with water, immersing it in water, boiling or steaming it, adding an aqueous solution of ethanol containing a nonionic surface active agent to the boiled or steamed rice. CONSTITUTION:Raw material rice washed with water is immersed in water at 5-50 deg.C for 2-24hr, boiled or steamed to give boiled or steamed rice, to which preferably 1-10wt% calculated as a loosening solution of an aqueous solution of a nonionic surface active agent in ethanol, containing (A) 1-70wt% ethanol and (B) 0.1-1wt% nonionic surface active agent such as glycerin fatty acid ester, lecithin, etc. is added, so that the solution is uniformly attached to the grains of rice. The grains are then dried with hot air at 60-100 deg.C, to give the aimed dried rice having <=7.5wt% water content. |
