Peptide derivatives of the formula: <IMAGE> in which R<1> is a substituted amino group which can be enzymatically eliminated to form a coloured or fluorescent compound R<1>-H. The said peptide derivatives are used for the quantitative determination of the enzyme C1-esterase. The determination is carried out by reacting a medium which contains C1-esterase, or in which the latter is produced or consumed, with one of the above-defined peptide derivatives and by measuring the amount of the cleavage product R<1>-H which is liberated per unit time by the catalytic hydrolytic action of the said enzyme on the peptide derivative, by photometric, spectrophotometric, fluorescent spectrophotometric or electrochemical methods.
