PURPOSE:To obtain a steviol glycoside sweetener soluble easily in water, having low calorific value and extremely excellent high sweetness, and giving no bitter taste to foods and drinks, by treating an aqueous solution containing stevioside and sucrose with microorganisms. CONSTITUTION:A medium containing stevioside and sucrose is treated with microorganism having fructosyl-transfer activity, e.g. Bacillus megaterium IFO- 12108. After removing the microbial cells, the medium is concentrated to obtain liquid or powdery sweetener having high sweetness and containing fructose-containing steviol glycoside. A low-calorific food or drink can be prepared by using the above product as a sweetener. |
