A continuous feed commercial oven having three controlled temperature zones. A central zone (10) is maintained at an elevated temperature for browning of product. This zone includes recirculation blowers (60 and 62) for directing heated air through arrays of tubes (42) for impingement of the product passing therethrough on a conveyor. Burners (56 and 58) within the central zone heat outside air to maintain the appropriate temperature. Air from the burners is also distributed laterally to outside zones where cool air is also introduced to reduce the temperature to a moderate cooking range. Exhausts (140 and 146) at either end of the oven draw spent air from the oven. The temperature profile for processing the food thus includes a moderate tempering zone, a high-heat browning zone and a moderate equilibration zone. |
