PURPOSE:To prepare the titled salted guts in a manner free from the defects of the conventional process, by removing the guts, cuttlebone, etc. from fresh sparkling enope squid (Watasenia scintilans), salting and dehydrating the body, separately treating the liver in the removed guts to obtain a seasoning and preservation liquid, adding the liquid to the above treated body, and ripening the mixture. CONSTITUTION:(A) The guts, bill and cuttlebone are removed from fresh sparkling enope squid, and the body is salted and dehydrated by the addition of 4- 8% salt, 2-4% sodium malate and 4-8% alcohol preparation. (B) 100pts. of the liver in the removed guts is mixed with 30-50pts. of saccharified reduced starch, 20-50pts. of a natural antioxidative antiseptic having fermentation-suppressing activity, 30-50pts. of a fermented seasoning liquid prepared mainly from rice koji, 1-15pts. of a natural gelatinizing preparation, 5-15pts. of a natural seasoning prepared by the hydrolysis of animal proteins, 1-15pts. of lactic acid preparation, etc. to obtain a seasoning and preservation liquid. The titled salted gut can be obtained by mixing 100pts. of the squid A with 20pts. of the liquid B, and ripening the mixture. |
