摘要 In a method for injecting meat with curing brine by an apparatus for carrying out the method, from the entire batch of uninjected meat, a portion to be injected separately is first divided off. The weight of this portion is measured as the initial weight. For this meat portion, the theoretical amount of curing brine is then calculated as the product of its percentage by weight fraction and the initial weight. The metered volume of curing brine is then set, which contains at least the theoretical amount, and the entire metered volume of curing brine is injected into the meat portion in one cycle. After injection of this meat portion, its output weight is determined. In this case, the metered volume for the subsequent meat portion is amended in accordance with the difference between the sum weight - comprising the weight of the theoretical amount determined plus the initial weight - and the output weight. The method offers the advantage of a highly precise curing brine metering.
