PURPOSE:To prepare a food product having desired tissue structure, physical properties, density, shape and functional characteristics, efficiently in short steps, in high quality, by carrying out the necessary conditioning treatment in the course of crushing, kneading, pressurizing and transferring process in an extruder. CONSTITUTION:The material supplied to the cylinder 2 of an extruder is filled in the cylinder 2 by the rotation of the screw 3, transferred under pressure, crushed, kneaded, and extruded. The filling ratio of the material in the cylinder is decreased at the part A in the extrusion process of the food during the transfer under pressure, and the material is subjected to the deaeration, removal of the liquid and injection of liquid by the apparatus 10. Thereafter, the filling ratio of the material being transferred in a state filled in the cylinder 2 is decreased, an additive is supplied to the formed space in the cylinder 2 by the apparatus 12, and the mixture is further kneaded and extruded. The necessary conditioning treatment can be carried out in the course of crushing, kneading pressurizing and transferring process in the extruder, and a food product having desired tissue structure, physical properties, density, shape and functional characteristics can be prepared efficiently in short steps.
