PURPOSE:To provide a milk drink containing soybean extract, rich in minerals especially phosphorus, containing soybean porotein having improved digestibility, free from unagreeable soybean smell nor astringent taste, and having resemblance to coffee milk in appearance but devoid of caffeine. CONSTITUTION:Chosen dry soybean grains are roasted, cooled, and roughly ground. Hot water is poured to the ground soybean to obtain extract liquid of roast soybean. The extract liquid is mixed with milk and a sweetener at ratios of e.g. 44.3%, 45.0% and 10.7%, respectively at 65 deg.C, and the mixture is homogenized, sterilized, cooled, and bottled. |
