NEW MATERIAL:A novel variant strain, belonging to Pediococcus halophilus, and nonfermenting D-glucose. EXAMPLE:Pediococcus halophilus 13-2 (FERM BP-702). USE:A strain for brewing soy sauce, capable of selectively removing L-arabinose and D-xylose taking part in browning and color deepening of the soy sauce from unrefined soy and soy sauce, etc. due to the specific assimilation of only the L-arabinose and D-xylose. Therefore, the resultant soy sauce has very light colored in color and luster without discoloration with time. PREPARATION:Pediococcus halophilus X-160 (FERM BP-701) is subjected to variation treatment to give the aimed strain. |
