PURPOSE:To prevent decrease in freshness of fish such as discoloration of the surface of a fish body and development of rancidity by purifying cooling water to reduce the contamination velocity of the cooling water. CONSTITUTION:A device 3 for supplying a substance such as gaseous carbon dioxide to inhibit the breeding of bacteria in cooling water 2 is provided in a fish hatch 1. A sterilizer such as an ultraviolet sterilizing lamp for sterilizing bacteria in the cooling water 2 and a bactericide supply device 4 packed with the bactericide such as sodium hypochlorite are also provided in the fish hatch 1. A circulating flow passage 6 is also furnished in the fish hatch 1 to discharge the cooling water 2 in the hatch to the outside to remove the contaminant contained in the cooling water 2 by a filter 5 and to return the cooling water again to the inside of the fish hatch 1. The filter 5 is formed of a circulating mechanism 14 provided with a strainer 9, a circulating pump 10, a flow rate regulating valve 11, a flowmeter 12, and a pressure switch 13 and the first, the second, and the third filter 5a, 5b, and 5c.
