PURPOSE:When food products are kept fresh using an antioxidant, the antioxidant is dissolved in an ethanol solution to form a gel and the gel is packed in vessels, then a vessel is used to enhance the effect of keeping freshness. CONSTITUTION:An antioxidant such as tocoferol, citric acid, ascorbic acid and so on is dissolved in an ethanol solution, formed into a stable gel. In order to control the vaporization rate, the gel is placed in a vessel 2 covered with lid 1 whose openings are adjusted so that the vaporization rate becomes more than 0.5g/24hr/75% RH4 deg.C. The antioxidant is diffused with the aid of ethanol vapor to keep the food fresh in the atmosphere.
