PURPOSE:To obtain a hamlike fish-paste product, containing fish meat formed into the form of a ham, and prepared by filling low-fat hamlike fish paste product having the flavor of ham made from animal meat in an edible film. CONSTITUTION:Actomyosin of muscular fibers in fish meat is dissolved with added common salt, and an animal meat additive and lardlike additive respectively added thereto, and the resultant mixture is then cast into a stainless steel container, gelatinized by the high-temperature or low-temperature gelatinization method, subjected to hot gelation and then cooled. The resultant gel material is respectively cut to a desired shape and give pseudo-animal and pseudo-lard pieces. On the other hand, actomyosin of muscular fibers of fish meat is separately dissolved with added common salt, and a binder additive is then added thereto to give a binder, which is then added to the resultant pseudo-animal meat and pseudo-lard pieces at e.g. 60:10:30 ratio to afford a hamlike fish-paste product. The resultant hamlike fish-paste product is then filled in an edible film, e.g. cylindrical collagen, etc., and twist is given to both ends thereof to provide a sealed state. |
