<p>PURPOSE:To enable the preparation of coffee liquid having similar taste and flavor to the coffee prepared by adding liquor to fresh-drawn coffee, by compounding powdery coffee with powdery liquor prepared from the liquid mixture of liquor and a saccharide composed mainly of dextrin. CONSTITUTION:A saccharide composed of an acyclic dextrin or a dextron such as the mixture of a cyclodextrin and an acyclic dextrin having a dextrose value of 5-40 is mixed with liquor such as brandy, whisky, etc., and the mixture is spray-dried to obtain powdery liquor. The objective coffee can be prepared by compounding 10-90wt% powdery liquor with 90-10wt% freeze-dried powdery coffee.</p> |
