PURPOSE:To make continuous operation possibe in neutralization, concentration and crystallization and obtain the titled compound industrially and advantageously in high purity, by crystallizing the titled compound from an aqueous solution of the amino acid in the presence of water-soluble cellulose derivative and polyvinyl compound soluble in water or polar organic solvents, etc. CONSTITUTION:An amino acid is crystallized from an aqeuous solution thereof in the presence of one or two or more of a water-soluble cellulose derivative, e.g. methyl cellulose or hydroxypropyl cellulose, polyvinyl compund soluble in water or polar organic solvents, e.g. polyvinylpyrrolidone, water-soluble starch derivative e.g. hydroxypropyl starch, gelatin or a partially hydrolyzed polypeptide, e.g. gelatin treated with an alkali, alginate or polyacrylate. The amino acid obtained by the above-mentioned method has remarkably reduced specific volume and good fluidity and is easily handled.
