PURPOSE:To obtain a soft adzuki-bean jelly only by stirring with hot water, and cooling the stirred material, by passing a mixture of powdery agar with starch powder and water through an extruder to form an expanded material, pulverizing the resultant expanded material, and incorporating the resultant powder with bean jam and a sweetener. CONSTITUTION:0.5-3pts.wt. starch powder is added to 1pts.wt. powdery agar, and water is then added to give 15-40% moisture in the kneaded material to knead the resultant mixture. The kneaded material is then passed through an extruder, heated, pressurized, extruded to an atmosphere under atmospheric pressure and expanded to afford an expanded material, which is then pulverized into powder. 2-5wt% resultant powder is then mixed with 20-70wt% kneaded bean jam and 25-80wt% sweetener, e.g. sugar, to give an instant soft adzuki-bean jelly. A colorant, aromatizing agent, common salt and another additive are added thereto as necessary. |
