Process and installation for the continuous refining of rolling material as an initial product for chocolate production, for example milk chocolate, in which use is made, as a basis for the recipes, of a mass of cocoa roasted as a thin layer, produced with the addition of reactive solutions, such as water, carbohydrates and milk constituents, in which a part consisting of dry milk and another of carbohydrates of up to 20% by weight are obtained as an initial product for the manufacture of the chocolate. To improve the use of the process from the energy and technological standpoint during continuous operation, and to improve the quality of the end-product, the invention proposes that the materials to be rolled are fed into an open system which can be heated, where they are degassed in a vacuum and mixed with an addition of gas and/or air at temperatures of between 80<o> and 120<o>C after which they are plastified, and that the plastified materials to be rolled are fed into a closed system where they are homogenized. The open system (A) consists essentially of a degassing reactor with a pre-plastifying screw, while the closed system (B) comprises an extrusion unit, with one or several shafts, in which the mixing and shear zones vary. |
