PURPOSE:To enhance coffee flavor, by blending specific amounts of a specific saccharified modified denaturated starch, spice, and water with a small amount of an emulsifying agent, treating the blend at a specific temperature, drying it to give a carrier composition for enhancing coffee flavor, mixing the composition with instant coffee. CONSTITUTION:70-98pts.wt. saccharified denaturated starch having 5-20 DE value and <=10wt% water content is blended with 30-2pts.wt. natural or artificial spice (preferably raw coffee beans, or coffee oil), 100-235pts.wt. water, and a small amount of an emulsifying agent, treated at 30-70 deg.C, flavor is adsorbed and included in the saccharified denaturated protein, and the starch is dried (preferably spray drying method) to give a carrier composition for enhancing coffee flavor. 2-10pts.wt. carrier composition for enhancing coffee flavor is blended with 98-90pts.wt. instant coffee powder or a corresponding amount of stock solution before drying, and optionally pharmaceutically manufactured to give a food for instand coffee having enhanced flavor.
