<p>PURPOSE:To obtain easily and economically the titled product of good quality, by fermenting an unsteamed starchy raw material with a conjugated enzyme agent prepared by mixing bacterial alpha-amylase with mold glycoamylase, etc. in the presence of a yeast culture added thereto at a specific pH. CONSTITUTION:An unsteamed roughly crushed starchy raw material. e.g. polished rice roughly crushed to give about 20 mesh particle size, is brought into contact with a conjugated enzyme agent prepared by mixing >=5U/g bacterial alpha-amylase with >=3U/g mold glycoamylase or further >=5U/g bacterial protease, and the pH is adjusted to 3-5 with an acid, e.g. citric acid. A yeast culture, e.g. obtained by inoculating rice KOJI in an amount corresponding to 1/2 the above-mentioned unsteamed rice flour with seed yeast, and fermenting the material for 5 days, is added thereto and fermentation is carried out for example 30 deg.C for 2 weeks to afford the aimed product.</p> |
