PURPOSE:A higher alcohol fatty acid ester is added to vegetable oil which has been isomerized by hydrogenation to adjust its melting point to a specific temperature to give a hard butter which is suitable for a chocolate butter. CONSTITUTION:(A) A vegetable oil which has been isomerized by hydrogenation so that it melts at 30-42 deg.C such as cotton seed oil of 100-135 deg.C iodine value is combined with (B) a high alcohol fatty acid ester melting at over 25 deg.C (candelilla wax) by 0.5-10wt% to give the objective hard butter. EFFECT:Mold release is good in production of chocolate and the product of high quality is obtained. |
