PURPOSE:To produce bean curd, colored to a beautiful yellowish orange color, and having a nice taste and flavor of good body, by using dried carrot, pressed juice or a treated material thereof. CONSTITUTION:Bean curd is produced by the conventional method. In any step thereof, a carrot is directly aded or dried carrot obtained by cutting and drying the carrot or pulverizing the dried carrot or pressed juice of the carrot or a treated material thereof, e.g. diluted solution, concentrate or dried powder, is added to soybean milk. The amount of the carrot, etc. is usually about 1-40% expressed in terms of the raw material carrot. |
