PURPOSE:To obtained boiled eggs with a low egg breaking ratio without eccentricity of egg yolk nor coagulation, by passing a circulating bucket chain having many rotatable buckets each containing an egg through a hot water preheating chamber and then a high-temperature heating chamber while rotating the buckets. CONSTITUTION:An apparatus having an inlet chamber (E), preheating chamber (P) containing hot water at about 50-60 deg.C, high-temperature heating chamber (H) filled with steam or hot gas chamber (H) filled with steam or hot gas at a higher temperature than that of the preheating chamber (P) and outlet chamber (O). Many buckets (B) each containing an egg are rotatably mounted on a circulating bucket chain 6, which is revolved in the order of the above-mentioned respective chambers. The buckets (B) themselves are passed through the high- temperature heating chamber (H) while being forced to rotate by an auxiliary chain 21 fixed or set at a low speed in parallel to the chain 6 and sprockets 22, fixed on the buckets (B), and engaged with the auxiliary chain 21 to force the buckets (B) rotate. As a result, the aimed boiled eggs with a low egg breaking ratio without eccentricity of egg yolk nor coagulation can be mass-produced with a high efficiency. |
