PURPOSE:Heat pipes in which electric heaters and a heat medium are fitted are heated in the fermentation mixture to effect uniform heating, resulting in the production of good-quality fermentation product with shotened aging time. CONSTITUTION:Heat pipes 10 which have electric heaters 10 and heat medium 18 built in are inserted in, e.g., MISO paste for fermentation in a tank 28, when the paste is fed into the tank 28. Electricity is applied to heat the heater 20 to allow the heat medium to boil and give the vaporization latent heat to the MISO paste to facilitate its warm fermentation. The heat medium is condensed by the action of wick 12 and fins 23. Such natural refluxing enables uniform heating of the fermentation mixture inside the tank 28, as long as electricity is applied to the heater 20. |
