PURPOSE:Heat pipes which have electric heaters and heat medium built in are inserted in the fermentation mixture and heated at the start of the fermentation, then the temperature is controlled, e.g., by stopping applying electricity, when cooling is required because of exothermal reaction after the start of fermentation, whereby fermentation product of high quality is obtained. CONSTITUTION:Several heat pipes 10 which have electric heaters 10 and heat medium such as water 18 built in are inserted in the fermentation mixture in the tank 28. When electricity is applied, the heat medium works to heat the pipes 10 uniformly to facilitate warm fermentation. When the temperature in the tank rises over a prescribed level, the electricity is stopped and the heat pipes acts as coolers. Namely, the heat in the fermentation mixture dissipates in the form of latent heat of vaporization through fins 24. Thus, both the peripheral part and the center are kept at a certain temperature range in the tank 28. |
