PURPOSE:The titled paste product having a taste like naturally-occurring lobster, by adding salt, seasoning, etc. to ground fish meat, grinding the blend to give a raw material starch for fish meat paste product, mixing the raw material starch with a specific amount of frozen modified mannan gel adjusted to <= specific thickness, coagulating the mixture under heating. CONSTITUTION:Ground fish meat is blended with salt, seasoning, starch, and one or more modifiers, ground to give raw material starch for fish meat paste product. 1pt.wt. raw material starch for fish meat paste product is blended with 0.2-2pts.wt. frozen modified mannan gel which is prepared by dissolving water- soluble mannan powder (e.g., galactomannan, etc.), adding a dispersion (e.g., calcium hydroxide, etc.) to the solution, coagulating the solution to give frozen modified mannan gel, molding the gel into <=3mm. thickness (preferably 1.5- 3mm.), the mixture is coagulated under heating, to give the desired paste product. |
