PURPOSE:To prepare instantly soluble hollow granular instant tea having excellent taste and flavor, by dissolving carbon dioxide gas in an aqueous solution of tea extract containing hydrolyzed starch, and spraying the solution in dried atmosphere under pressure. CONSTITUTION:A concentrated aqueous solution of tea extract containing hydrolyzed starch is prepared from a tea extract and a hydrolyzed starch having an average polymerization degree of 4-10 and composed of a dextrin having a DE value of 10-25 or its mixture with a proper amount of a cyclodextrin. The solid concentration of the solution is 20-55wt%, and the amount of the hydrolyzed starch in the solid component is 20-70wt%. 0.25-2.5wt% carbon dioxide gas, based on the water in the solution, is dissolved in the solution, and the mixture is cooled at about 0-30 deg.C and sprayed in a dried atmosphere with a pressure nozzle-type sprayer.
