PURPOSE:To obtain a binder for animal protein, consisting of a liquid containing a small alkaline agent added to a blood serum liquid, and having improved binding performance without separation even at ordinary temperature and under heated conditions nor causing a strange smell in eating. CONSTITUTION:A blood serum liquid is collected from blood collected from an animal body by contrifugation, and about 1-3wt% powder of an alkaline agent, e.g. calcium hydroxide or magnesium oxide, is added thereto. The resultant mixture is thoroughly stirred to give the aimed binder. Meat to be bound obtained by removing the fat, sinew, etc. and trimming is sprinkled with or dipped in the above-mentioned binder to apply the binder uniformly thereto. The meat is contained and filled in a container of required shape, pressurized, kept under pressurized conditions and bound. |
