PURPOSE:To make a cheese almost nutritiously complete and low caloric, give a crispy texture and obtain a cheese product widely and commonly usable even by aged men and persons paying attention to health, by incorporating a raw material cheese with mashed potato. CONSTITUTION:Mashed potato, water and a sour agent are added to a raw material cheese, and the resultant mixture is heated at a temperature (about 80- 95 deg.C) at which the mixture is melted and mixed for thorough mixing. The resultant mixture is then cooled and solidified to give the aimed product. In production of the product, the mixture is preferably packaged and cooled to about 10 deg.C to give the final product. Thus, the aimed cheese food having well balanced nutrition and good crispy sense of eating is obtained.
