PURPOSE:To produce boiled noodles and steamed noodles from the same production line, by admitting high-temperature steam in place of hot water and hot water in place of high-temperature steam. CONSTITUTION:Water 25 is admitted into the bottom of a partition wall 2 to block the flow part at the bottom of the wall 2, and water is admitted into a closed chamber 5 with a water supply pipe 21. High-temperature steam 26 is jetted from steam jet pipes 18 and 18' to change water in the closed chamber 5 into hot water 27, and the high-temperature steam 26 is jetted to increase the steam pressure in the closed chamber 5 and cause a difference in water levels between the interior and exterior of the partition wall 2. The boiling point of hot water 27 can be increased to keep the hot water 27 at 100 deg.C or above. The hot water 27 is admitted in place of the high-temperature steam 26 in the closed chamber 5, and boiled noodles are subsequently produced. Thus, boiled and steamed noodles of multikind and small quantity can be produced from one production line. |
