Such blades are a component of a cutter set which is used in the food industry, preferably in the meat processing industry. The object of the invention is to shape the blade advantageously such that a drawing cut is realised and that the proportion of micro-cutting processes is increased, and that furthermore the drag and flow resistance are reduced in the range of action of the blade. The blade according to the invention consists of several blade vanes which have curved cutting edge paths, preferably corresponding to a logarithmic spiral. The blade vanes are provided with two cutting edge paths which run mutually parallel; each cutting edge has a wedge-shaped cross-section, and the inner cutting surfaces are tapered in a V-shape and have groove-like notches. The blade vanes are furthermore provided with undercuts behind the cutting edge paths, opposed to the direction of flow of the material to be processed, or on both sides. <IMAGE>
