PURPOSE:To prepare a delicious sliced KONJAK (paste made from the starch of devil's tongue) having excellent physiological activity and good palatability, and seasonable and processable easily, without carrying out the gelation with an alkaline agent, by compounding specific components such as refined KONJAK powder, etc. at specific ratios. CONSTITUTION:The objective sliced KONJAK can be prepared by mixing 0.2- 5.0pts.(wt.) of refined KONJAK powder, 0.2-5.0pts. of carrageenan, 0.5-5.0pts. of locust bean gum, 100pts. of water, 0.05-5.0pts. of an emulsifier (e.g. sucrose fatty acid ester), 0.5-80pts. of an edible oil or fat, and proper amounts of tasting component and seasoning, pouring the mixture into a box-shaped mold, and cooling the content. |
