摘要 A process for prodn. of chocolate covered wafers bakes sheets of wafer, cools them, matures them in a tunnel, heats them at 65 to 80 deg.F in a 30 percent relative humidity room and then applied cream and chocolate. The maturing tunnel is at a higher temp. than the humidity and stacks of wafer and cream layers are produced before applying the chocolate.
