An installation for producing clear vegetable juices and for recovering constituents which can be put to further valuable use is characterised in that the untreated juices pass through an ultrafiltration assembly in which each ultrafiltration unit is preceded by a heat exchanger permitting adjustment of the temperature of the juices to a temperature T DEG C = -6 (pH) + 80 DEG C (to within +/- 3 DEG C), the pH being controlled upstream of the exchanger.
