For virtually complete adaptation of Swabian noodles made by machine to the ideal shape of the noodles prepared by hand from a board, the noodle dough is no longer pressed, as was previously the case, through holes of virtually identical cross-section, but through different types of openings determined precisely in experiments, different shapes of openings of elongate type being mixed in a particular proportion with different types of round openings. In this case, the shape and number of the openings are oriented precisely by the variety of shapes of noodles prepared by hand. In this case, the shape and area of the different openings must be in a particular proportion to the thickness of the perforated plate. By changing the mixing proportion of the openings, the length and width of the shapes of the openings and the thickness of the perforated plate, very simple devices can be made for the different preferences - finer or coarser noodles. The new perforated plate can be used as a noodle press, as a noodle cutter, and as a noodle grinder or in another technical form.
