PURPOSE:To obtain a meat-like food having close resemblance to the meat of poultry and animal, by using defatted soybean flour, soybean protein obtained therefrom, whole soybean, skinned soybean or whole-fat soybean flour as raw material, and carrying out the extrusion cooking with a twin-screw extruder. CONSTITUTION:Defatted soybean flour or soybean protein obtained therefrom is mixed with a specific amounts of edible oil and water, or whole soybean, defatted soybean or whole-fat soybean flour is mixed with a specific amount of water. The mixture is used as a raw material, and subjected to the extrusion cooking with a twin-screw extruder, and if necessary to the drying and pulverization. The amounts of the edible oil and water are 5-50% and 13-50% of the whole raw material, respectively. The barrel temperature of the twin-screw extruder is set to 110-300 deg.C, and the feed of the raw material is controlled so as to retain the raw material in the heating barrel essentially for 10-180sec. A meat-like food having close resemblance to the meat of poultry and animal can be prepared by this process. |
