PURPOSE:To prepare efficiently R(-)-citramalic acid having high optical purity, by treating citraconic acid (anhydride) with a specific fungus belonging to the genus Candida, collecting a prepared reaction product. CONSTITUTION:A microorganism [e.g., Candida rugosa (IFO0750)] belonging to the genus Candida, Picha, Oerskovia, etc., having citraconate hydratase, is used. Namely, the microorganism is aerobically cultivated in a nutritive medium at about 4-9.5 pH at about 20-45 deg.C for about 10-96hr, then treated with citraconic acid (anhydride), so that it is converted into R(-)-citramalic acid. The mold is removed from the culture to give a culture solution, which is adjusted to <=3 pH, extracted with ethyl acetate, etc., and the extract is purified by chromatography, etc., to obtain R(-)-citramalic acid. |
