Device for rapid cooling of alimentary products cooked in a vacuum. The invention relates to an apparatus which makes it possible to cool in a number of minutes by immersion in iced water alimentary products packed in a vacuum which emerge from cooking. It consists of an insulated tank 1 lined with a stainless steel tank 2, the whole closed by a cover 3. The tank 2 is filled with water which is cooled by a refrigerating system set in operation by a switch 13 and comprising a group 4, an evaporator serpentine 5 and a condenser 6. The water and the products are agitated by a pump 7 fixed under a grille 8 held by hooks and straps 9 and set in operation by a timer 10 and functioning indicator 11. The stirring of the water is carried out by nozzles 12. The device comprises two alternatives characterised in that the stainless steel tank 2 constitutes the internal wall of the unit and in that the cold serpentine 5 can be immersed in the water of the tank. <IMAGE>
