摘要 PURPOSE:To prepare the titled noodle lump having uniform noodle density and excellent palatability, and free from the reconstitution nonuniformity with hot water, by frying noodles in a frying container in an oil tank, and turning the noodles upside-down during frying before solidification. CONSTITUTION:A frying container 16 having a number of perforations at the bottom is fixed to the main body 14 of the mold frame 13 having the chain-connection nib 17 at the upper center of the side plates, the frame-turning nibs 18 to both sides and under the connection nib 17, and the lid 5 having the lid-opening nib 20 and attached to the main body 14 with a spring hinge. The mold frame 13 holding the main body 14 is transferred along the direction of the arrow by the chain guide 10 of the conveyor furnished with the frame-connection chain 22 connected with the main body 14 with the nib 17. The lid 15 is opened by hooking the nib 20 of the lid 15 with the lid-opening guides 23, 24, and a prescribed amount of noodles are charged from the noodle-inlet chute 26 to the frying mold container 16. The lid 15 is closed by the action of the spring hinge 19. The container 16 containing the noodles is transferred by the guide 10 and immersed in an oil tank 11 containing hot oil 30, and is turned upside-down around the nib 18 with the frame-turning guides 31, 32 by the action of the nib 18. When the main body is pulled out of the tank 11, the lid 15 is opened by the guides 23, 24, and the oil- fried noodle lump is dropped on the receiving chute 33.
