PURPOSE:To prepare dried fishes such as dried sardines, etc. having excellent palatability, easily, economically and safely in view of food sanitation, by drying small fishes such as raw sardines, etc., and sprinkling n-hexane to the fish to effect the extraction of oil therefrom. CONSTITUTION:Small fishes such as raw sardines, etc. are dried with a drier or in the sun to decrease the water-content to 6-10%. The dried fishes are placed on a mesh conveyor and sprinkled with n-hexane to extract the oil contained in the small fishes. The n-hexane containing the oil is dripped through the mesh of the conveyor. The n-hexane attached to the body of the fish on the conveyor is evaporated to obtain the objective dried sardine.
