PRODUCTION OF OIL-IN-WATER TYPE EMULSIFIED MATTER HAVING SPREADABILITY

PURPOSE:To provide spreadability to an oil-in-water type emusified matter by preparing the oil-in-water type emulsified matter having a specific fat and oil rate, maintaining said emulsified matter under the constant temp. condition in the region of the specific temp. range above and below with the rising m.p. of the fat and oil constituting said matter as a center. CONSTITUTION:An oil-in-water type emulsified pattern having >=30% fat rate is prepd. by a conventional method. Such oil-in-water type emulsified matter is maintained and rested under the constant temp. condition in the temp. region of the range within about 5 deg.C above and below with the rising m.p. of the fat and oil constituting said emulsified matter as a center. The holding time under the constant condition is more preferable as the time is longer and is satisfactory with >=10min. The emulsified matter develops spreadability when said matter is slowly cooled. The cooling rate in this case is more preferable as the rate is lower. If said rate is <=2.2 deg.C/min, the fluidity intrinsic to the oil-in-water type emulsified matter is lost and the emulsified matter is converted to the paste state having spreadability.
