PURPOSE:To produce the titled compound in high yield, with simple operation, by reacting glycine with a benzaldehyde compound in a mixture of water and a hydrophobic organic solvent in the presence of a surfactant and an alkali, and treating the reaction product with an acid. CONSTITUTION:Glycine is made to react with a benzaldehyde compound in a mixed solvent composed of water and a hydrophobic organic solvent (e.g. benzene) in the presence of a surfactant (e.g. polyoxyethylene alkyl ether) using an alkali (e.g. lithium hydroxide), and the product is treated with an acid to obtain beta-phenylserine. The smoothness of the stirring in the reaction and the reaction yield are improved by the addition of the surfactant. The beta-phenylserine formed by the acid treatment can be separated from the benzaldehyde only by the liquid-phase separation procedure by dissolving the beta-phenylserine in the aqueous phase in the form of a mineral acid salt, and the benzaldehyde in the organic solvent phase.
